The natural dry process, also known as the dry or unwashed method, is a traditional technique for processing both Arabica and Robusta coffee beans, highlighting the natural flavors of the coffee fruit. In this method, the ripe coffee cherries are harvested and then spread out to dry in the sun on raised beds or patios. The cherries are regularly turned to ensure even drying and to prevent mold. This process can take several weeks, during which the cherries' sugars and mucilage impart distinctive fruity and complex flavors to the beans. Once fully dried, the cherries are hulled to remove the outer layers, revealing the green coffee beans inside. This method is particularly well-suited to regions with abundant sunshine and low humidity, and it results in a coffee with a rich, full-bodied profile and pronounced sweetness.
